Good morning! Yesterday it was pasta Sunday at home so as usual we made some fresh pasta. BUT instead of cooking a traditional sauce, we roasted some vegetables better known as “Scalivada”.
It is “a kid can make it” easy. It takes a long time in the oven but that´s about it!
–Chop roughly: (for 4 people)
- 2 Paprikas
- 2 Onions
- 6 Vine tomatoes
- 2 Eggplants
- 6 Garlic cloves
– Add olive oil in a oven dish and set the vegetables. Bathe them in the olive oil and a dash of sea salt. Place the dish in the oven at 180º for 1.3 hours. Every now and then check the oven and turn the vegetables to make sure the are not stuck in the bottom.
Once your pasta is ready, remove the tray from the oven and mix it with the vegetables. Finish with some parmigiano or grana padano cheese and serve.
