I hope you are all having a very happy Sunday! I know I am!
Today I´ve made the most delicious Gnocchi soufflé ever! and because of that I decided to share this recipe with all of you.
I think it´s an easy yet sticky one so prepare yourself for some dish washing hahaha!
-Ingredients: for 2 people
- 50 ml vegetable stock
- 100 g fresh spinach
- 210 g self raising flour
- 1 egg
Set the vegetable stock to boil, once its boiling add the flour and mix vigorously with a wooden spoon or a manual whisk, immediately add the spinach and whisk until the flour is hydrated. Then take it away from the fire and keep mixing for about 30 seconds and add the egg and continue to whisk until the mix looks homogeneous. You can also use an electric mixer (I used a kitchen aid).
Once all this is done set the dough inside a pastry bag (I recommend to use a double bag if you are going to use the disposable ones because the heat will tear it apart).
Your are almost good to go! For the last step boil abundant water on a big pan and when the water is ready push the dough through the pastry bag and cut them as they go. They should be around 2 cm long. Once they start to flow start taking them out and serve with a nice sauce and some grated cheese.
For this recipe I’ve made a white cheese sauce.
