Chicken Fajitas

Happy Sunday to everyone! Finally the sun is shinning bright and warm here in Amsterdam so we are all heading out of the cave, but before doing so first thing´s first: Food

Probably one of the most simple things you can prepare to make a fast and delicious brunch. Scrambled eggs coming up next!

-For the chicken fajitas:

  • 2 Medium sized carrots
  • 1 Paprika
  • 1 Big onion
  • 1 Zucchini
  • 1 Green onion
  • 5 Tbsp Philadelphia cheese
  • 1 Tbsp Olive Oil
  • Salt to taste
  • 6 Smal fajitas
  • 300-350 g Chicken breast (cut in thin slices)
  • Fresh coriander
  • 5 Tbsp Sour cream

First cut all the vegetables in julienne and sauté in a pan with olive oil. Always start from the onions and then continue from hard to softer vegetables. Season with salt. Once ready set them aside and repeat the same with the chicken.

Spread the cheese over the fajitas, Add the vegetables and the chicken. Season with some fresh lemon drops and salt, the sour cream and the fresh coriander.
