Good morning all! What did you have for breakfast today? I have early dinner party tonight but lots to cook before getting ready and thats why I woke up around 5:00 am…So far, I´m bringing to you my delicious, empowering and comforting Vegan, gluten-free banana, walnuts and chia pancakes.
–For the mix:
- 1/2 cup of banana flour
- 1/2 coconut flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tbsp coconut sugar (or cane sugar)
- 1/2 tsp sea salt
- 1 1/4 almond milk
- *1 flax egg (1 Tbsp flaxseed meal + 2 ½ Tbsp water)
- 2 tbsp melted coconut or almond buter
*Replaceable by a regular egg if not vegan
- 2 sliced ripe bananas
- Agave syrup
- Walnuts (chopped)
- 1/2 tbsp Chia seeds
Preparation: Mix all the ingredients for the mix in a bowl, leave the milk for last, stir to combine. Heat a large nonstick skillet or cast-iron over medium heat. Carefully rub skillet with coconut oil or vegan butter.
Once hot, spoon 1/4 – 1/3 cup of the batter onto skillet. Cook until surface of pancakes have some bubbles and the edges appear dry. Add the bananas on top, 1/2 tbsp of agave syrup, 1/2 tsp of chia seeds and cover with pancake mix. Carefully flip pancakes and cook until browned on the underside.
Top it with bananas, chopped walnuts and some chia seeds and voilà!
