Homemade bbq, chicken legs & stuffed potatoes

Good morning all! I´m still half way through my banana pancakes but I just wanted to quick share you this recipe. It´s so simple you´re probably thinking its nothing new and you had it many times before.

The thing is, here in Amsterdam we don´t see the sun often and because yesterday was probably the last sunny day of the winter season I had a BBQ and needed to say it out loud!

So, here it goes…

-Homemade BBQ Sauce:

  • 2 cups Honey
  • 1 6 ounce can tomato paste
  • 1/2 cup dark brown sugar
  • Optional: 1/3 cup Jack Daniels hot chilli sauce
  • 2 ounces Bourbon
  • 1 tbsp Dijon mustard
  • 1 tbsp Garlic powder
  • 1 tbsp Cayenne pepper
  • 1/4 tsp Tabasco

-The Grill:

  • 8 Chicken legs
  • 20 gr Butter
  • Salt to taste
  • Homemade BBQ sauce to taste
  • 2 Corns

Stuffed Potatoes:

  • 500 gr Potatos
  • 100 gr Cottage cheese
  • 2 Big onions
  • Optional: Crispy bacon

-How to:

BBQ: Combine all ingredients together in a medium bowl and let it rest for an hour before using. You can also refrigerate it, just remember to stir before serving.

Potatoes: Boil as many potatoes as you want to use (I made this recipe for two) for around 15 minutes for medium size potatoes. Insert a toothpick and see if it can get through. Then, cut them into half. They shouldn’t loose shape. Carve the inside of both sides with a tea spoon enough to add caramelised onions (butter fry the onions in a hot pan with a bit of salt until it looks tender and golden brown) mix it with the cottage cheese and fill the inside of the potatoes. Optional add chopped crispy bacon. Then close it and wrap all the potatoes separately in aluminium paper. Toss the potatoes on top of the hot coal for about 30-40 minutes.

Chicken legs: Set the chicken legs on the grill with medium hot coal and paint them with melted butter, add salt and when the start looking crispier paint them with the BBQ sauce until they are done.

Notice I also grilled a couple of delicious corns with some butter and salt
