Vegan gluten-free banana bread

Good afternoon food lovers! Today I´m bringing to the table a creamy moist banana bread for the all sweet addicts. I´ve made it vegan and gluten free but you can replace the flour for the regular one and the flax eggs for hen eggs in the same proportions ; )

This recipe serves 8 generous slices

Ingredients:

  • 2 flax eggs (3 tbsp flaxseed meal & 7 1/2 tbsp water)  (replaceable by regular eggs)
  • 40 ml coconut oil (melted)
  • 35 ml apple pure
  • 55 gr cane sugar
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/4 tsp sea salt
  • 120 ml almond milk (replaceable by regular milk)
  • 80 gr almond flour
  • 35 gr banana flour
  • 35 gr count flour
  • 2 medium sized ripe bananas
  • 40 gr chopped walnuts
  • 30 gr raw cacao

How to:

Preheat the oven 180*C. Butter and flour a rectangular pan. I used this dimensions: 10″ x 13″ x 5 1/2″ high.

In a mixing bowl set all the liquids with the eggs and the apple pure, stir. then, add the solids starting from the flours leaving for last the bananas, the nuts and the chocolate. stir to combine.

Put the dough in the baking pan and bake for approximately 45-50 minutes or until a toothpick inserted in the centre comes clean.

Ones the time is up, take it out and let it rest until it cools down. take it out of the pan en just enjoy!
