Smoked salmon bruschetta with homemade hummus

Good morning readers! I’ve been rushing lately to set up this new food blog to share with you all my new recipes. Because I live in Amsterdam and winter is around the corner I´ll be posting lots of casseroles and spoon dishes with seasonal products.

Today as I had almost no time to stop for food I decided to make something super fast, healthy and of course delicious: Smoked salmon bruschetta with humus.

The only trick here is making the hummus, but it´s very simple. In this recipe I made it with Tahini but if you rather not use it, just leave it out.

I made this just as a quick bite for myself so bare in mind dish itself only serves one person, BUT the hummus will be enough for 4 people.


For the Hummus: 

  • 250 grams of cooked chickpeas
  • Fresh lemon juice (1 big lemon)
  • 65 ml Stirred tahini
  • 1 small minced garlic clove
  • 35 ml extra-virgin olive oil
  • 1/2 teaspoon cumin, ground
  • Salt and pepper to taste
  • 40 ml water
  • Paprika to taste (for serving, not during the preparation)

-For the bruschetta:

  • Spelt bread
  • Olive oil
  • Salt and pepper to taste
  • 100 grams Smoked salmon
  • 8 Cherry tomatoes
  • Sage leaves

How to:

In a food processor mix the tahini with the lemon juice and process for 1 minute, gather together what was spiced on the sides and process again for around 20-30 seconds.

Add the garlic, oil, cumin, and a 1/2 tsp of salt to the previous tahini mix. Process for 40 seconds, scrape the sides and process for another 40 seconds or until it looks homogeneous.

Next rinse the chickpeas, add half of the chickpeas to the food processor and process for 1 minute. Scrape sides and add remaining chickpeas. Process for 1 to 2 minutes until it looks dense and smooth. Leave the water for last and process until the paste looks even, without tiny pieces of chickpeas.

Once you have this covered the “hard part” is over, so just set some good toasts of spelt bread, add the hummus on top, some olive oil, salt, pepper and paprika. Then cut some fresh cherry tomatoes, set the smoked salmon on top and some sage leaves. Now you are good to go!
